About Karen Ehrens

Karen Ehrens is a health and nutrition consultant, registered dietitian, and policy advocate. She works to connect people to health & wellness through communication, coordination, advocacy, and food & nutrition.


  • Consultant to Healthy North Dakota, connecting people and groups working for prevention. She created, organizes, provides content and directs the website www.healthynd.org.

  • Speaker to community groups, legislators and professional organizations about childhood obesity, farmers markets, local foods, food safety and nutrition; over 30 local and statewide television and radio interviews.

Coordination & Leadership

  • Public Policy Chair for the North Dakota Dietetic Association, directing the efforts of the association in federal and state legislation in the areas of nutrition and health

  • Analyzes policy and legislation, writes and provides testimony to the North Dakota Legislative Assembly and to the U.S. Congress.

  • Testimony before the Senate Agriculture, Nutrition and Forestry Committee in 2009 encouraging healthy foods throughout schools.


Karen and her husband Duane, a chef, teach a cooking class help others to experience the tastes and health benefits of a prairie-style Mediterranean Diet with Bismarck State College Continuing Education, Training & Innovation


Karen holds a Certificate in Public Health from the University of Minnesota and obtained undergraduate degrees from North Dakota State University and Minot State University, including a minor in Political Science. Karen completed internships in both dietetics and in the U.S. Congress. As a Licensed, Registered Dietitian, Karen is learning on a continuing basis and considers herself a lifelong learner.


Karen is involved in her community as a volunteer with the Prairie Public Broadcasting board, the North Dakota Dietetic Association, and the Bismarck Schools Health Council. She gardens with kids at Roosevelt Elementary School, with great people in the Bismarck Community Gardens hunger plots, and with fellow Bismarck Garden Club members.
